Vinegar and Vino Cotto

The quality of this vinegar can vary widely, depending on the quality of the starting ingredients and process.

This unique Forvm is produced in Catalonia, Spain. Using a traditional method, unfermented grape juice is blended with wine and some of the previous year's vinegar and left to convert to vinegar over a 6 to 8 month period. You can taste and smell the oak and chestnut casks used in the ageing.  Forvm Cabernet is produced from quality Cabernet Sauvignon wines, which are partially acidified very slowly using an artisan method. Typically 5 year Aged.

Vincotto has a sweet flavor, and is not a form of vinegar, though a sweet vinegar version can be produced using a vincotto as a base.

Raspberry, Cider and Sheery vinegar are staple condiments you should always have in your pantry being both sweet and tart which adds zing and spice to any dish you use it in.
